Classic Tiramisu

    500g Mascarpone

    4 Eggs

    100g Sugar

    300ml Espresso (cooled)

    2 tbsp Cocoa powder

Make the cream base

Mix egg yolks with sugar until smooth and sunny. Then add mascarpone - mmm, it's already delicious!

Whip the egg whites

In another bowl, whip egg whites until they're fluffy like little clouds. Fold gently into the mascarpone mixture. Be nice to the fluff!

Dip and layer

Dip your lady fingers in espresso - quick! No swimming, just a splash. Layer them, then spread the cream. Lady fingers and cream again.

Chill and dust

Top with cocoa powder and let it live in the fridge for a few hours. When you wake it up - ta-da! Buon appetito!

Chef’s Notes

The secret is in the dipping - too long and it gets soggy! A quick dunk is all you need.
