Separate the eggs

Separate the egg yolks from the egg whites. Keep both - we need them!

Make the yolk mixture

Mix the egg yolks with sugar until pale and creamy. This takes a few minutes but it's worth it!

Add mascarpone

Add the mascarpone and mix until smooth and dreamy.

Whip the whites

Whip the egg whites until stiff peaks form, then gently fold them into the cream. Be gentle - we want to keep the fluffiness!

Dip the ladyfingers

Quickly dip the ladyfingers into the coffee - do NOT soak them! Just a quick dunk.

First layer

Arrange a layer of dipped ladyfingers in your dish, then spread a layer of cream on top.

Repeat

Make another layer of ladyfingers and cream. Keep going until you run out!

Dust and chill

Dust generously with cocoa powder and chill for at least 3-4 hours. Patience is hard, but trust me!

The secret is in the dipping - too long and it gets soggy! A quick dunk is all you need. Works great in an 18-20cm dish or individual dessert cups!
